There are existing title blocks that come out of the box in NX-5 and I was wondering how to Edit them for my own?

Open them (as part files) and edit.

How do you remove their logos and move around the look of the borders?

- make sure it is on an editable layer
- if it is still a pattern make sure it is exploded (I don't know the keyword I'm not at my computer)

This is a recent post with a lot of the info I mentioned against your other post on the same subject.

I would add that in general people would copy the sample part files and edit the contents. Afterward you can edit your own version of the pallete file to point at your drawing templates which you would most usually save in a different place.
