10wt oil is closer to the viscosity of water and 90wt gear oil is closer to solid.  What then is the number for viscosity when the substance is no longer fluid and becomes solid.

The metric version is centi-stokes (cSt).

Here are two charts with various materials:

Both centipoise and centistokes are metric.  CentiPoise is dynamic viscosity and CentiStoke is kinematic viscostiy.  One related to the other by the fluid density.
