What should you look for and mainly consider when designing a concrete folded plate with a v-shape for a large house?
- gravity loads to be considered.
- huricane wind loads to be considered, as well.

I like to mention that the concrete plate in question is the roof of the house.

It is important to consider horizontal reactions from your folded plate, and how these will be resisted by the supporting structure.
Alternatively, if you do not provide full horizontal restraint, you must accurately calculate and allow for the horizontal movements of the plate.
If the roof span is greater than 15m and the pitch is greater than about 10 degrees, horizontal forces and deflections will be significant.

My recomendation is that you model the thing with thick plates in FEM and subject it to code's loadcases.

I did some work on folded concrete plates for a floor. I did a hand analysis and an FEM model. The forces are actually quite complicated and you also have to look carefully at the support conditions. Are you supporting the roof plate at the ends and along the edges in which case it is not acting as a V shaped beam. If it is supported only at the ends then it can and under dead loads the ridge area will be in compression and the eaves in tension. However for a wide V you have to look at how the shear is transferred between the two and reinforce appropriately. The problem with FEM I found is that it gives you results for an isotropic material. Reinforced concrete can be far from that.
