I know I can calculate sensible cooling energy with the equation KW=(1.08*CFM*delta_T)/3412 (BTU/KW).  How do I calculate energy for latent cooling?

Read h from your Psych chart at each state point and use mass of air.  This is the total heat; latent + sensible.  You can easily calculate the sensible and subtract, or use the slope of the line to determine the sensible heat ratio from the protractor tool usually printed on the chart.

In water terms, you are adding or removing moisture by evaporation or condensation. So optionally, you can determine the total moisture removed from the absolute humidity scale and use:
Ql = hfg.dW
The heat transfer is 2465kJ/kg or 1060 BTU/lb x the mass of water removed.
