If you were to have 2 exactly shaped/sized pieces out the same material except one came from a plate and one came from a solid block of aluminum.

Would they weigh the same?

Yes, assuming that they were the same alloy.

It also depands on the process of the plate, if it has been compresed or heat treated?

Basiclly if they have the same density, then they should be same.
