My application involves corrosion protection of high strength anchor rods which will be prestressed against fatigue failure.

The rods are European grade 8.8 (almost equivalent to the steel used in ASTM A325 bolts)

Dacromet is baked at around 500F after application, whereas galvanize is done at the temperature of molten zinc (780F) or hotter. With the latter, you may get some stress relief of the parts that may be a problem for you.

Just to emphasize swall's response, it is standard to use a non-electrolytical zinc-rich coating rather than hot-dipped galvanizing on high-strength fasteners.  The high temperature of the molten zinc may reduce the strength of the fasteners.  Dacromet is only one of multiple types of non-electrolytic zinc-rich coatings.  You should consider products from Magni and Doerken as well.

It is also standard to galvanize grade 8.8 bolts.  I am not aware of any problems this causes.
