I have an expression representing an angle in multiple sketches, which arbitrarily ...on it's own and without my permission mind you, changed itself to a non-angular type (inches).  Existing angular dimensions seem to function ok, but I can't utilize this expression in new angular sketch dimensions.  Any ideas why this happened, and more importantly... how can I change it back?

Any help would naturally be appreciated...

I've never heard of that happening before (not saying it's impossible, just that it's a new one for me).  What happens if you edit the value of this non-angle 'angle'?  Does the model update without any errors and as you would expect it to if the expression were still an angle?  I suspect that you've already tried to edit the dimensionality of the expression (change it from a 'Length' back to an 'Angle') and that you were NOT successful otherwise you'd never had posted this request for help.

Anyway, I suspect that you're stuck with this odd dimension, but if it still behaves OK for you, just that the system won't allow you to reuse it wherever the system is expecting an Angular value (Degrees/Radians) and you don't want to delete the expression/sketch dimension and start over, may I suggest this as a workaround.

Create a new expression and set it equal to your odd dimension, but set it's Dimensionality to 'Constant'.  Now create another expression and set it equal to the one you just created above, but this time set it's Dimensionality to 'Angle'.  Now you have an expression that can be used wherever the system is expecting an angular value yet it's still linked to the original expression which will update when it's modified.

was it constant before? And perhaps did you change it using and expression. I suspect that I've seen this happen before and I never nailed down what happened....
