Hello friends,
I am designing a restaurant's drainage system. I have a 3" floor sink which is receiving indirect drain(s) from the following equipment
Dripwell, Hand sink, Pasta Cooker and a scullery sink.
UPC Table 7-3 footnote 1 states that indirect waste receptors shall be sized based on the total drainage capacity of fixtures that drain therein to, in accordance with Table 7-4. This table gives GPM to DFU values.

Questions:
Do I have to calculate GPM drainage from every fixture? Or what if discharge GPM(s)for the fixtures are not known?

The drain should  be sized for all of the fixtures (4) it will drain. Use the table to determine the flow rate and pick  a  drain  from a manufacturer's catalogue ie Wade,  Josam.
