Prior to NX5 I was able to select only specific curves in a sketch (instead of the whole sketch) by setting my filter to "curves" and selecting only the curves that I want to extrude.

I now have that new pull-down filter set to "curves" but it always selects the entire sketch in the extrude that I want to do. "Sketch" is an available option on that filter, and it is not selected.

It is really not the end of the world if I need to break down the sketch, into a few individual sketches, but I would rather not.

Any suggestions on something that I will need to toggle to make this work?

Try toggling the "Stop At Intersection" button on the selection toolbar.

Actually I think that you're looking for the the 'Single Curve' option to be set in the 'Curve Rule' item on the Selection Bar.  Granted, you may still need to use the 'Stop at Intersection', but I suspect that you want to first select individual curves and for that you need it set to 'Single Curve'.
