I am looking for the standard heel heights of wood trusses.  I need to match 2 different heels.

Are you trying to match the gutter board heights?  If so, you need to know the heel height, pitch, and overhang of the trusses that you are trying to match.

Standard heel heights are typically 1/4" (But cut) plus the plumb dimension of the top chord (depends on the pitch of the truss).

I like to see a 12" heel height to account for insulation and ventilation.

cjswartz is correct.  1/4" butt cut added to the vertical plumb dim of the top chord.  For example 4/12 pitch with 2x4 top chord is typically 3 15/16".  same truss with 12/12 pitch is 5 3/16".  
These are just he standard heel heights.  Many times heels get raised for different reasons.

I like to use 11 1/4" heel heights to allow for the use of 2x12 blocking in every other truss space.  Allows for ventilation, easy construction, and a solid connection of the wall to the roof sheathing.

As others have said in northern climates, the heel heights are often much greater due to insulation requirements to conserve energy.

Heel heights depend on roof pitch, overhangs, fascia board, insulation,top of window to top of bearing and your elevations (matching fascia, etc).

In general, down south it's typical to do a 1/4" but cut plus your plumb cut for the whole house. Up north, it's 3-1/2" but cut plus your plumb cut for your main roof and only 1/4" but cut and your plumb cut over the garage and porch areas.

Typivally, down south for your block houses your window headers are 2 coarses high (16"). Up north, your window headers are 2x10's plus two top plates (12-1/4").
