What should be the concrete placement methods to be monitored for a mass concrete having a size of 10m * 10m* 25m ? And also, what type of concrete mix design should be specified as concrete mix so that to maintain low heat of hydration in the mass concrete?

Monitor the timely delivery of concrete to the job site. Trucks should arrive at uniformly spaced intervals, then immediately return to the batch plant to be reloaded. You do not want loaded trucks waiting at the job site to be unloaded nor do you want long delays in concrete delivery because there were no empty trucks at the batch plant to be loaded and dispached.
Also keep a close eye on concrete temperature in the truck at the time the truck is unloading - reject any truckloads that are too hot.
Make sure that the entire surface of the pour is advanced uniformly to ensure that there are no cold joints.
Make test cylinders from each truck and have provisions in place to "deal" with all of the cylinders simultaneously (probabaly a LOT of cylinders) .
