I have SW2008 SP2.0 installed. Should I create a new installation for SP3.0 or upgrade to SP3.0?

I upgraded, but the choice is yours.

I have never made a separate install of a SP, but If SP3 turns out to be a bust, I imagine it would be easier to revert???
