Certainly!  You have some calibration issues to deal with but yes.

The alternative is to use the fibre in the digital domain with appropriate signal conditioning at either end. This could be really crude - a variable frequency pulse train for example - through hitching a ride on an existing ethernet fibre right up to a full custom design. What are you trying to achieve, and over what distance? Single channel or multichannel?
