   I want to specify something to secure some screws and to indicate that screws have been secured.  Traditionally, this is accomplished by fingernail polish.

   Do people call stuff like this up on drawings, or is there product or terminology out there that is more professional (looking)?

I usually call out...

Mark torqued fasteners with paint pen or other indelible marking device.

I think the term you are looking for is "Inspectors Lacquer"
There are several makers out there, here is a link to one of them  http://www.opcompany.com/opco2.html

   This does the same thing as the fingernail polish and you can get it in colors other than pink.

The Torque Seal product in berkshire's link offers the added feature of being "tamper evident" if you are talking about an adjustment screw.  It is "crumbly" when dried.

I always specify torque seal as opposed to paint pen/marker, as a bolt with paint markings can be loosened and re-tightened to line up the marks again.

Looks like I am going to have to carry pink fingernail polish in my inspection bag from now on.  

This should go well with the contractors.  Maybe I should wear a pink hardhat too?

You can do that on a lot of job sites ( wear a pink hard hat.) if you forget the one you were supposed to bring.
The site supervisor will hand you one with great glee.

We used to use glyptol to make servovalve hardware tamper apparent.
