Is there a product that could be used to keep solder from tinning a copper surface a few mm away and down hill from a real solder joint?

We'll be trying weld anti-spatter, and maybe even PAM cooking spray.

Solder mask is usually applied at the PCB manufacturing level.  Kapton tape works pretty well for small jobs....  providing your process can handle the extra thickness associated with the tape.

Solder mask works if the PCB is SMOBC (solder mask over bare copper). SMOBC is the standard practace today, but years ago many boards were tin plated before being masked. When reflowed, these tinned board would wick solder under the mask - sometimes desirable for traces carrying heavy currents.
