Is there a small device that can be used as a 'data logger' for recording concrete temperatures over a week or so?

Yes.

I was not familiar with it myself before, but on my current project we are using a HOBO thermocouple. You attach a lenth of wire which gets embedded in the concrete and the instrument (about 2" by 2") records the temperature at the end of the wire (therefore inside the concrete) at regular intervals. We download the information into the computer afterwards for further analysis

You should be able to get them from a good instrument supplier.

I have previously used thermo-couples embedded in concrete to montitor the temperature of 80MPa concrete. The pier section was about 2.0m thick so we had thermo-couples in the centre and 200mm from the face at 3 different elevations. We used an independent testing company, they provided all the equipment and then issued a report.
