How much time do I have from the time I take a sheet of 2024T0 from oven and work on it (90 degree bending) Is it
minutes, hours ?

If you are talking about taking a T0 sheet, placing it in an oven, and bringing it to 920 degrees then quenching it.
You have about 15 Min's to complete your forming operations at room temperature. After that time the yield and tensile strengths start to climb, then you run the risk of cracking the part.
If you are talking about holding the part in an oven at 775 degrees for a couple of hours then cooling slowly, you will have a soft part ( condition O ) that can be worked for an unlimited amount of time and will require re heat treating to get  the Mechanical properties back up.
