I have a need to get more opinions on fitting a shrink interference fit.
bore of roll sleeve is 5-14" Dia witha shaft interference fit of 0.005". I have to drive the shaft 10" into sleeve.
Roll is existing and lagged rubber covered.
Shaft is 4140 steel and sleeve is Cast iron.
How can I cool it easily and how much to be sure I get it right?

You'll find some useful equations in Machinery's Handbook. You should check the numbers.

How much find some equations, as Mike suggests look in machineries. You could try from first principles based on the thermal coefficient of expansion for the materials but the fact one part is 'rubber lagged' may complicate it.
As to how to cool it:
Put it in a Freezer?
Use Dry Ice?
Liquid nitrogen's probably too cold and will make the part brittle but it may be fun!
