I am trying to create a cut on the edge of a cylinder, but I can't seem to sketch the cut path parallel to the center axis. (basically creating a bolt) Any ideas? Thanks!

Just do a helical sweep.  Make your path on any plane that is through the axis.

Another question on making a spring, is it possible to have the ends of the spring end at opposite sides?

if I am understanding you correctly .. it would mean you would just have to work out your pitch and spring length
