I have some plastic latch assemblies and they tend to not operate smoothly when new. I would like to apply some sort of lubricant. I am thinking about dry graphite in order to avoid any adverse effects on the plastic were a liquid lubricant used. Anyone got any other ideas?

I definitely recommend Nye.  Depending on the exact resin used in the latches you may want to use something other than graphite.
