How can I change/apply Document Properties to the whole assembly including parts in the sub-assemblies?

Write a macro.

There are macros to copy custom properties and to populate material properties through an assembly.  Perhaps combine them?

Otherwise, there are other macros out there for copying properties and populating properties through multiple files.

I think I should make my question little clearer. It is all about "Document Properties" Tab under Tools/Options.

I want to change and apply Detailing /Dimensioning Standard and Units to the Main Assembly and the entire subassemblies, part files.
