So here it is, I have several different configurations on a sinlge part that I have in assembly. What I am having trouble doing is calling out the specific configurations within the assembly. It seems to only want to show the default configuration. How do I change the different part configurations in an assembly?

All you should have to do to change the configurations is:

Right click on the part -> Select Component Properties and pick the configuration that you want from 'Referenced Configurations'

Consider using a Design Table when you have several (more than 2 or 3) configurations. DTs make manipulating the part/assy much easier.

I have used a design table to modify the parts. Is there a way to use a design table in an assembly to call out a previuosly configured part without having to do the aformentioned right click Select component properties thing? That would be great if there was.

Yes, you just use the $configuration@part_name parameter.
