Can anybody tell me were I would get a astm number for all fittings on 316,316L 304 and 304L. I think that forgings are A182 and fittings are Astm 403 . But can somebody put me on the right track please.

Yes.
The product form information below is from Table 1 in ASME B16.34, which is referenced by ASME B16.11, which is the Specification for fittings

ASTM A 182 forged/forged bar
ASTM A 240 plate
ASTM A 479 bar
ASTM A 430 Tubular
ASTM A 376  "
ASTM A 358  "
ASTM A 312  "
