How does one design an RC snubber circuit for a 120VAC solenoid valve so I do not fry some switch contacts when I de-energized the coil? Would I need to get the inductance from the manufactory or can I specify a MOV and how?

At 120V AC any half-decent relay should be able to switch a solenoid coil without excessive contact damage. Why do you anticipate a problem?

They only work for so many cycles. They waste less energy than snubbers. If your coil changes states a couple of thousand times a year MOVs are the ticket. If your relays shift a hundred times a day... You need a snubber.
