Anyone can recommend a simple FEA package that will let me compare the flat pattern of a part (ex: wing skin of a aircraft) and compare it against the final formed model to know how much stretch it required and where by creating a strain map?

A simple package?  Probably not.  If you are talking about a fabric wing, the material models are not uncomplicated.  If you are talking about a metallic wing, the material model is not too difficult (depending upon the metal), but in both cases, you are dealing with geometric non-linearity.  You will also need a package that reports strains or, perhaps even better, strain energy density.  There are several out there, but may not be "simple" as the analysis is not without complexity.

So with package would you suggest that show the matl streching required to reach the form model from the flat pattern model?
