When mousing over on "create a new route" a message pops up  that states to drag and drop a connector or flange to start the route.  When this button is selected the design library then opens to a flange folder.

Is there a way to change the folder that opens by default.  I would like to have fitting options in addition to flanges that would start a route.

Go to Tools/ Options and under the System Options tab pick Routing.  At the top is an area for you to browse to the whatever you choose to be your default Routing folder.

My location is set to a folder called "routing".  When I start a route it opens a folder inside of "routing\Piping" called "flanges"
