I used to reveal the innards of parts and assemblies in Solid Edge by means of a dynamic clipping plane and I've been told I can do it in CATIA too.  Can anyone point me to it?

Yes. It's in the Assembly workbench, so you'll have insert your CATPart into a CATProduct.  From there, it's the function called "sectioning."  If you can't find it from the icons right away, I would suggest that you pull it up from the View -> Commands List menu item. (then look for the highlighted icon)
