Which load combination from ASCE-07 (05) applies to Timber Design? 2.3.2 or 2.4.1 if either?

Regardless of materials: If you're doing LRFD, use 2.3, if you're doing ASD, use 2.4.

All the timber design I've done (and was taught in school) utilized ASD. The copy of the NDS that I reference is geared toward ASD, though, of course, there's an LRFD counterpart. I have no experience in timber design using LRFD, though...

Check that your building code specifies the load combinations from asce7, some only refer to asce7 for the wind load portion.
