When I need to change a finish date to a later date, MS Project recalculates the number of Task Hours.  I didn't want them to change.  How do I stop this automatic recalculation?

You need to turn off automatic calculation.  Go to Tools, Options, Calculation tab and uncheck the "Updating task status updates resource status" check box.

I don't believe either of these answers will produce the response you are looking for.

If you have a task set up for 40 hours worth of work over 10 days, and you need to adjust the finish date so that it now spans 15 days, but you do not want the effor or Work number to change, what you need to do is:
1. Change Type to Fixed Work - this will hold the work number fixed.
2. Update the Duration until your Finish dates is accurate.
