I have a simple question, how many cubic yards are in a ton of Asphalt concrete paving ?

All of my sources for AC have a different weight. The weight veries from 2.04 to 2.10 tons per cubic yard of AC compacted to proper density.

I have 3774 lb/cy, or 1.89 tons, as delivered (uncompacted).  But, it is in a spreadsheet, and I don't remember where I got that.  I have used it many times for estimating in the past, and never had a bust in my calcs, though.

I've always used .057 T/SY per inch of depth, in place, for general estimating purposes.  Which is about 2.04 T/CY compacted.

It varies with the density of your aggregate. I figure 2.0 to 2.2 ton/CY depending on the source.

0.5144 cy/ton asphalt, (assuming 144lbs/cu.ft.).
