For a 750kVA standby generator, which is more common? Liquid cooled or air cooled? Liquid cooled will cost more, but how much more?

Liquid cooled at 750kVA is very unusual. You'll be looking at a full custom design, so 'expensive' is the short answer.

Deutz used to make some bigger air cooled diesels.  I a not sure exactly how big.   An additional expense with one of them would be buying ear protection for everyone within a mile of the thing.

Are you talking about alternator cooling or engine cooling?
Yes there are liquid cooled alternators, but as ScottyUK says, unusual to the point of non-existent at 750 KVA.
There may be air cooled engines that large, but the overwhelming majority of sets in that size are conventional radiator cooled diesel engines. For marine engines forget air cooling. The same engines with heat exchangers or keel cooling. Forget raw water.

I saw some MAN German Army trucks in the early 70s that had the Deutz air cooled disel engines. I will to have to research the max size they made.
The US Armys M-60 tank had an air cooled 750 V-12 Diesel.  Very noisy.

Re BJC's post, I used to work for Deutz.  The biggest they do as aircooled is about 260kW.
