I am trying to create a channel or path (extruded)at the surace of a part. The suface is not flat. Can anyone give me some tips on how to go about doing so?

Use surface tools to offset your non-flat surface to the depth you want your channel.  Cut from the outside in to that surface (Up to Surface option in cut).

If your cut is too complicated, you'll want to build walls for your channel with surfaces, use the walls to trim your offset channel floor, knit the surfaces together, and use Cut with Surface command to cut your channel.
