We use SS305 for certain components. For cost reduction, I am planning of using SS204Cu, or maybe SS201.
But with the higher strength of SS201, would I need to modify the tooling?
I would like to use the same set of tools.

Strength is not important for my requirement, I require low magnetic permeability.

What do you suggest?

Also, what is a reliable site to get a rough estimate of stainless steel prices? I am looking for SS434, 400, 201

If you require low perm after forming you will not get it with any alternate alloy.  the standard 304, 201 and 204 chemistries will be partially magnetic after deformation.
There are special 200 series chemistries that off high formability and low perm, but they are specials.

Ed,  is a caveat to your post that the standard alloys would re-attain low permeability if fully annealed after forming?  Of course, the cost of heat treating probably negates any savings from switching away from 305.

Yes, re-annealing would do the trick, but you are right, I figured that the point of this was to avoid that.
