– How can I force my graphs to show the timeline correctly if the time (in 24hr format) goes past 00 … Lets say I have a data set that starts at 18:00 …and ends at 02:00 in the morning. The graph should follow the correct timeline …and not change the timeline to 00:00 to 02:00 and then start at 18:00 to 00:00 …

I can not see that there is a date and time formatting option. I must be missing something obvious …

You can set the time as text and use xy graph maybe?

You can set the format of the x-axis in an x-y scatter graph to "time."  Sometimes it's necessary to set the major unit to 1:00 (in that format) to force the correct format on the chart.  If you use a time format, however, make sure it's a date-and-time format or as xy-scatter your x values with the same time might show over the same x-point. (i.e. if your cells only contain time, then there is no difference between 5:00 today and 5:00 tomorrow, hence the same x-value, but if the cells contain date and time, then Excel stores 5:00 today as a different value than 5:00 tomorrow and they will be different x-values.)
