Is there any data avalable on shot peening intensity vs residual stress measurements?

No.Intensity depends on shot size, velocity, coverage and peening time.Thus,you can obtain the same Almen strip intensity in different ways. The residual stress pattern that a shot peening process of any given intensity will produce will vary with material hardness.

The residual stress pattern after shot peening is also highly dependent on the previous stresses within the part.  Lots of information available from Metal Improvement or shotpeener.com.

I have had stuff shot peened by Metal Improvement.  Those folks know their business.  They better; lots of aircraft, particularly helicopters fly stuff they peened.

But...you need to know what it is that you are after in order to give them a starting place.
