Carpenter Technology suggests a surface roughness of 15-50 microinch (rms), a good lubricant such as moly. disulfide, and low applied load (say, < 1000 psi) to avoid galling.
Adding to TVP's example, many people first encounter galling when they cannot undo a 316L in/on 316L fastener -- the bolt snaps due to cold welded threads.
