I understand that the main firewater system pressure should be constant (jockey pumps keep the pressure in the system)so the opening of any point of consumption (hydrants, monitors ,etc) will cause the pressure to drop to a determined pressure set point and automatically start the firewater pumps. Is this set point code (NFPA) driven? Can anyone provide information on what drives the main firewater system set pressure?

As MJCronin suggests, the pump discharge pressure depends on your system configuration and function.

That would involve the hydraulic design characteristics (headloss) of the fire main from the fire pump to the point of application of fire water, as well as the hydraulic design characteristics of the fire monitors or sprinklers.

When the system is in standby and you don't have any problem the pressure should be at 100 psi, and by general it you have some fire the system need to increase the pressure some times to 300 psi it depends of the size of the equipment you want to protect.
