(OP)
where can i find guidelines on the sizing of a smoke extraction system serving a supermarket?

RE: smoke extraction guidelines

Aisle 5...

Just kidding.

NFPA 92B "Standard for Smoke Management Systems in Malls, Atria, and Large Spaces"

ASHRAE & Society of Fire Protection Engineers "Design of Smoke Management Systems"

I don't think it's something you'll find that can be boiled down to a thumbrule (e.g., 1 cfm per ft2, etc.). It gets pretty involved.

RE: smoke extraction guidelines

In Australia/NZ there is a standard "AS/NZS 1668.1:1998
The use of ventilation and airconditioning in buildings. Fire and smoke control in multicompartment buildings" that is very useful too but specific to multi-compartment buildings.
