how do you specify plastic nonlinear behavior in just the 3-axis and no yielding in the 1 and 2 -axes??

Possibly try using *potential with values set very high for 1 and 2.  This would result in a very high yield stress for these two directions. It might work.

the anisotropic yield in ABAQUS makes use of the Hill's potential function, which doesn't work in my application (modeling uniaxial compressive behavior of bone). what i have is the stress-strain data at various points that describe the nonlinear plastic behavior, but the input data is only valid in the 3-axis, which i guess i have to set high yield stress for the other 2 axes. i think *orientation allows me to define orthotropic material properties, but i don't know how to specify the directions.
