I am trying to trim a surface using a sketch. It works, but the trim projects through all surfaces, not just the one I wish to modify - there is no option to set a direction/depth as in 'cut' with solids.
Is there another way? I have tried creating an extruded surface from the sketch, then a combination of trim and delete surface, but it will not let me delete all parts of the trim surface and looks an untidy solution.

So by my experience, this is just a messy process. To reduce confusion, I name my surfaces, and when a given feature is completed I stuff all the supporting geometry into a folder which is labeled according to the feature I just created (I've had parts with hundreds of features stacked up before).
If you need to delete part of what is recognized as a surface by SolidWorks, use the Delete Face tool instead of selecting a surface and hitting the Delete key--that way you'll have a parametric record of the face deletion, and you can select a single face of a surface for deletion. (This is useful for cutting a hole in a surface with a split line, for instance.)
