new to 480v lighting. estimating warehose project w/(200)-250w, 480v highbay fixtures. what is the best method, fixtures divided across 3 phase(3 pole) breakers or 1 phase(2 pole)breakers?

2-pole breakers.  You'll have an easier time working on the system, and one breaker's worth of lights will be a smaller portion of the total.

It also depends on what wiring method you are using. There are pre-fab channel wiring system  (industrial track) are available that can have three phases and ground and abiltiy to plug-in fixture connections. You can choose the plug-in connectors to select any two of the three phases. You simply choose alternate phase connections to balance the load.  In such case a 3-pole breaker will be used.

With 277 volt fixtures, single pole breakers may be used.
