I have 3-4" thick steel platens used in processing at temperatures of 450 -600F. The original cooling system becomes ineffective due to fouling / mineral build up when water is the working fluid.

How effective is cooling with air? What flow rates are needed?

Sounds like you're better off trying to find some sort of chemical to neutralize the scaling.  Cooling with air drops the heat transfer coefficient substantially.
