Hi , I have to deal with pumping this mix.
How could I gte the specific wieght and viscocity of such mixture , according the % of cement in water

You'll have better luck posting in either the Civil/Environmental other topics forum or the Water treatment & distribution forum (where they deal with pumps) or perhaps the Waste disposal & treatment forum (where they deal with fluid mixtures, e.g. sludge).  A structural forum might prove even more rewarding, however, as they're the concrete experts.  All I can say with certainty is that Earthwork/grading is not at all related to pumping concrete.
