Any ideas or suggestions on how I could control a 5A 110vac Fans/Blower speed using a 0-10vdc signal?

Depends on what kind of 1 phase motor it is. Some cannot be used with speed controllers. Only PSC and Shaded Pole are capable. If PSC, get a 1 phase VFD from Bardac (US) or Invertek (UK), same drive. There are other brands too, can't think of them but this has been discussed here several times, so if you do a keyword Search for 1 phase VFD you will find it.

Shaded pole motors, such as ceiling fans, can be controlled with variable voltage only, i.e. rheostat. Analog input means needing to use an electronic voltage controller such as is used on heating elements. Try Watlow or people like that. The Bardac drive will work here too, just more expensive.

Let me add that you are describing a 3/4hp motor.  You could also use a (less expensive?)(more reliable) 3phase motor with a more conventional 3phase VFD running on only a single phase source. Most would accept a 0-10V input directly.
