I thought if in my assembly I picked a component and went to component properties then changed the component name that it would update my BOM to reflect that name, but it does not. I can open and rename each component individually but I'm wondering if there's a different way so I don't need to do this.

That depends on how you have your BOM setup.
What is your BOM actually reading?
What property are you changing?
The standard BOM reads the filename (the name the component is saved as) & the description from the properties.
