I am looking for some basic information on the design and selection of heater-treaters, gun barrels, and free water knockouts, as well as advantages/disadvantages to each.  Can someone point me in the right direction?

The International Human resources Development Corp. (IHRDC) in Boston has a 28-volume book/software reference series covering the design and operation of surface production facilities called “Production Facility Bookware Series”.  Go to:

There, you can read about what material is covered.  I believe you will find everything you are looking for.  You can buy each book separately for about $175 or the entire collection for about $3,500.  If you are interested, call Tim Donohue (617) 536-0202.

Gulf Publishing publishes a couple books called "Design of Surface Production Operations", or some such.  Author is Ken Arnold.  These books have all you need (unless you are doing California heavy crude, then forget it...).  Search the Gulf Publishing website.
