Is there a way to mirror a drawing view with it's dimensions so that when you are finished you will have two views; one left and one right hand?

Not that I know of. The views are created from actual models, so you will have to create a LH/RH model.

Why don't you "copy" the view and instead of using say the "front" view you use the "back" view?

For now I have just added the note "mirror opposite". But I will try the copy/back view next time. I just might work.

I was unclear why you would want to mirror a drawing, but it sounds like you want a mirrored part drawing.  I create the mirrored part, dimension the left hand version, then I insert an isometric view of both the left and right hand versions on the drawing.  Next I label the left iso "LEFT HAND (SHOWN)", and I label the right iso "RIGHT HAND (OPPOSITE)".  

This way, I only dimension it once, and it is clear there 2 "hands".

smcadman: That is basically what I have done. And you are right, it is the easiest and fastest way. But the powers that be wanted to see a drawing for each component. Even that would not have been difficult since I mirrored the component in the assembly and therefore already have a model to detail. I just wanted to take a short cut. Fortunately, solidworks has forced me (the powers) to.
