Is there a way I could get information from ford on how a vehicle reacts in different situations such as variable RPM, throttle position, and car speed.  Information such as shift points (or equations for them), air/fuel mixtures (depending on TP, speed, and RPM), and etc.  Anyone could hook up a computer and get information, but I'm looking more toward what ford wants for a stock vehicle, and how any aftermarket products I develop should effect the vehicle to give me an idea of where to start.  Any help is greatly appreciated!

You're asking for what Ford calls "proprietary information," the sort of thing that Ford engineers have spent literally hundreds of man-years learning, developing, and optimizing.
It's not reasonable to hope they'd give you this information.

You're free of course, to attempt to reverse-engineer your way to this knowledge.

Look up Mega Squirt there is a lot of info about sensors and there influence on engine management profiles.

I tried to build an analog system for motorcycles and after the o2, throttle position and crankshaft position I already had two more sensors then I knew what to do with. The problems of who has priority, and what amount of influence does each one have drove me to use an existing microporcessor unit .... Good luck to you and about 10 talented engineers.

It takes about an hour to work out the shift points for a given vehicle in drive, so I really don't see why you can't do it yourself.

You'll need TPS, vehicle speed and preferably MAP.

Then just drive at constant MAP or TPS noting the change points.

While this won't give you the details, it'll give you the rough shape of the shift schedule.

I realize I could figure shift points myself, however what i'm looking for is the throttle position, MAF readings, engine load, RPM, etc etc, and how they effect air/fuel mixture and shift points.  I will look into Mega Squirt for now, thanks!

When you learn enough to realize the scope of what you're asking for - for free! - you'll realize what a silly request it is.

Sorry rob, maybe you misunderstood me; I was merely looking to see if anyone knew who I could contact to simply get information from ford.

I think the simple answer is NO. They spent to much money acquiring it to give it away for free.

The only way Ford is likely to part with that information is if you convince them they stand to make a large profit from some idea of yours, and even then you will have to sign a NDA that will give them your wife, your life savings, your first born child and your testicles if you try to do anything with it that does not benefit Ford financally..
Your best bet is aftermarket tuners that have reverse engineered there way to that information at great expense.. again, they will likely not hand it over gratis..

Option three..  keep searching the net and you will find clues to how it all works and peice together an understanding of the relationships of all the inputs and outputs over time.

As for what ford wants from aftermarket add-ons..  generally i think you'll find they want you to leave their stuff alone.
