HI,

Looking for some help on how to turn off the grid display in the drafting enviroment as well as changing the background color to white from gray.

For the grid, go to Preferences -> Workplane...
On the drawing grid tab there is a toggle button (upper right) that controls grid display.

For the background color go to Preferences -> Visualization.
On the color settings tab there is a section for drawing part settings. If you have 'monochrome display' checked you can change the foreground and background colors here. If monochrome is not checked, then I think it inherits the background color from modeling (change this on the 'color palette' tab). I prefer to uncheck monochrome because the colors make it less confusing when dimensioning, cutting sections, etc.
