I would recommend the kister distillation operation and design books.

Excellent background information.

A good book on the theory and equations of distillation columns is Equilibrium Staged Separations by Wankat.

I personally would just use the simulators and vendor advise on the the number of passes to go with.  Sulzer Chemtech has a free simulator on their website.
